Dr. Carlos manages high-risk food allergies in children, using desensitisation to build tolerance to foods such as cow's milk and egg so children can live without the constant threat of anaphylaxis, and treats severe childhood asthma alongside general paediatrics. His programmes cured milk allergy in 150 children and egg allergy in 50. He led the paediatric allergy department at Cadiz University Hospital for over a decade, directed Spain's paediatric anaphylaxis group, leading its first national guidelines for children, and has published more than 25 journal articles.
