  • 1/3 cup dried cranberries
  • ¼ cup chopped walnuts
  • ¼ cup crumbled feta cheese
  • 4 dried apricot halves
  • 8 tablespoon balsamic vinaigrette


• Heat a medium non-stick frying pan over medium heat. Spray with cooking spray and add the chicken breast. Cook chicken thoroughly and slice chicken into strips In a large salad bowl, add spinach, cranberries, feta, and walnuts
• Peel orange and cut orange into inch cubes, Add to ingredients in salad bowl
• Cut dried apricots into small pieces, similar to cranberries in size
• Lightly toss all ingredients in the salad bowl
• Place sliced chicken over the top
• Serve immediately
